Ingredients:

  • 4 pounds of unsliced bacon
  • ½ cup of light brown sugar
  • 2 tbsp of BBQ rub
  • 18 ounces of BBQ sauce
  • 6 ounces of rib glaze

Directions:

Step 1

Prepare the smoker or grill for indirect cooking at 250 degrees temperature, then add two chunks of cherry wood into the hot coals for added smoke flavor, and proceed to prepare the bacon. First, remove the bacon from the packaging, then cut them into 1½ inches strips lengthwise, and then cut each strip into 1½-inch cubes. In a small mixing bowl, mix together the brown sugar and BBQ rub until well combined and uniform, then transfer the cubed bacon pieces into a large mixing bowl, and sprinkle the sugar mixture all over them. Give it a nice toss until evenly coated and seasoned, then lightly grease the cooling rack with canola oil before placing them on top of a tray lined with aluminum foil, and place the seasoned bacon pieces all over the rack.

Step 2

Put the bacon pieces on the prepared grill or smoker, then let them grill for about an hour, then flip each piece over, and continue to cook for an additional hour. While waiting for them to cook, combine the BBQ sauce and rib glaze in a mixing cup or bowl, then remove the bacon burnt ends from the smoker, and transfer to a half-size aluminum pan. Drizzle the sauce mixture all over the top of the bacon burnt ends, then gently toss them to coat evenly, and then put them back into the smoker to let cook for 20 to 30 more minutes. After 20 to 30 minutes, remove the pan from the smoker, then allow them to cool slightly before serving, and enjoy!
