Ingredients:

  • 2-3 cups of mashed potatoes, leftover or store-bought
  • eggs, hard-boiled, chopped
  • 1 cup of celery, diced
  • green onions, sliced
  • Chives, chopped
  • ¼ cup of relish, sweet or dill
  • tbsp of yellow mustard
  • Creole seasoning, or paprika, or any seasoning you want

Finely chop the onion, green onion, chives, and celery into really small pieces, then in a large mixing bowl, add the mashed potatoes, and the chopped onions, green onions, chives, and celery as well. Add the yellow mustard, then roughly cut the eggs, and add them into the bowl as well. Gently toss and fold them together to combine, then season them with creole seasoning, paprika, or any seasoning you want to taste and adjust the flavor as desired. Place it in the fridge and allow it to chill, then once ready to serve, transfer it to a serving bowl, and top it with some more egg slices. Garnish it with a few chopped chives and sprinkle some more creole seasoning or paprika. Serve and enjoy!
