This recipe by Simply Mamá Cooks on YouTube is seriously delicious I can eat it every day and never get tired of it. I usually enjoy corn as is but when served with a yummy cowboy butter sauce it tastes even more wonderful, but what made me love this particular video tutorial is that comes with a BBQ chicken recipe that is just as good as the cowboy butter corn. This combo will make your family impressed and want more than just one serving.

Ingredients:

Cowboy Corn

  • 4 corn
  • 8 tbsp unsalted butter
  • 1 large lime, zest, and juice
  • 1 clove of garlic, grated
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp Dijon mustard
  • 1 tsp Tajin (chili lime salt)
  • 1 tsp crushed red pepper flakes
  • ½ tsp smoked paprika

BBQ Chicken

  • 7 to 8 leg quarters
  • 4 medium lemons
  • 1 tbsp Maggi seasoning sauce
  • 2 tsp liquid smoke
  • 2 tbsp Montreal chicken seasoning
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1½ cups of your favorite bbq sauce

Directions:

Cowboy Corn

Step 1

Place a pan on a stove over medium-high heat, then add the butter, and once melted turn off the heat. Add the garlic, lime zest, crushed red pepper flakes, paprika, Tajin, parsley, and chives, then stir them all together until combined, add the Dijon mustard, and lime juice, and continue to stir until incorporated. Taste and adjust the flavor as desired, then set it aside, and allow it to cool.

Step 2

Cut the corn in half, then place them in a large pot of boiling water with a sprinkle of salt, and allow them to cook for about 4 to 5 minutes. Turn off the heat, then remove the cooked corn from the water, and place them in a serving bowl. Pour the cowboy sauce all over the corn, then sprinkle shredded cheese if you want, and serve along with chicken or as is.

Bonus: BBQ Chicken

Step 1

In a Ziploc bag, add the leg quarters followed by the lemon juice, seasoning sauce, liquid smoke, chicken seasoning, smoked paprika, onion powder, and garlic powder, then seal the bag, and shake them well until well coated and incorporated. Let them marinate in the fridge for a few hours or up to overnight for the flavors to seep into the chicken, then once ready to cook, remove them from the chiller, and let them rest until most of the coldness is gone.

Step 2

Place the leg quarters on a baking sheet lined with parchment paper, then season them with more chicken seasoning and onion powder to taste, and let it sit at room temperature while preheating the oven at 400°F. Place the chicken in the preheated oven, then allow them to cook for about 45 minutes, and glaze them with the BBQ sauce all over until nicely coated. Bake them for another 20 minutes, then serve with chicken rice and corn, and enjoy!
