I can never get tired of eating chicken and it’s my absolute favorite dish ever. When I need a chicken recipe, I always opt for easy and quick to prepare, just like this cashew chicken by Home Cooking Adventure on YouTube. What I love about this dish is the combination of cashew and chicken, it was a surprising ingredient that I never thought I’d enjoy.

Ingredients for Skillet Cashew Chicken:

Chicken

  • 1¼ pound of chicken breast, boneless and skinless
  • Salt
  • Freshly ground black pepper
  • 1/3 cup of cornstarch
  • 2 tbsp of vegetable oil

Sauce

  • ¼ cup of soy sauce
  • 2/3 cup of vegetable stock or water
  • 4 cloves of garlic, minced
  • 2 tbsp of hoisin sauce
  • 1 tbsp of brown sugar
  • 2 tbsp of rice vinegar
  • 1 tsp of sesame oil

Topping

  • 1 cup of roasted cashew nuts
  • green onions, finely chopped

How to Make a Skillet Cashew Chicken:

Step 1

Clean the chicken breast and cut it into small bite-sized pieces, then season them with salt and pepper to taste, and transfer them to a large bowl. Sprinkle cornstarch over the chicken, then give them a good toss to coat evenly, and set the chicken aside.

Step 2

In a small bowl, add the soy sauce, vegetable stock, sugar, garlic, brown sugar, hoisin sauce, and sesame oil, then stir them until combined and uniform, and set the sauce aside for later. Place a large skillet on a stove over medium-high heat, then add 1 tablespoon of oil, and heat it before adding half of the chicken.

Step 3

Spread them in a single layer, then cook them for about 1 to 2 minutes until lightly browned, flip them over, and cook the other side for another 1 to 2 minutes. Remove the chicken, then transfer them to a plate, and set them aside.

Step 4

Cook the remaining chicken, then put the first batch of cooked chicken back in the pan, and then add the green onion, cashews, soy sauce mixture, and rice vinegar. Give them a good mix and cook them for about 2 minutes until the sauce has thickened, then sprinkle the chopped green onion and sesame seeds over the chicken, and serve with rice, noodles, or veggies. Enjoy!
