Ingredients:

  • 2 tbsp olive oil
  • 20 – 30 chipolata sausages
  • 1 large red onion (peeled and roughly chopped)
  • 2 red peppers (deseeded and roughly chopped)
  • 20 mini chorizo (bite-size ones, chopped in half)
  • 3 cloves garlic (peeled and minced)
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1/2 cup red wine (optional)
  • 2 chicken stock cubes (crumbled)
  • 14 oz can of chopped tomatoes
  • 14 oz can haricot beans (drained and rinsed)
  • 14 oz can cannellini beans (drained and rinsed)

Directions:

Step 1

To start, heat 2 tbsp of olive oil in a pan, then add 20 chipolatas. Cook them for about 6 to 8 minutes until they are all browned, then add a diced large red onion and cook for 3 minutes until the onion starts to soften. Next, add 2 roughly chopped red bell peppers and 20 bite-sized chorizos. Cook those together for about 3 minutes, then add 3 cloves of minced garlic, 2 tsp paprika, and 1 tsp of dried thyme. Stir it all together and cook for a minute. After this, add 1/2 cup of red wine and let it bubble away for 2 minutes until reduced slightly.

Step 2

Sprinkle over 2 crumbled chicken stock cubes, then pour in a 14 oz can of chopped tomatoes. Give it a good mix and bring it to a boil, then turn down the heat and simmer for 15 minutes. After 15 minutes, add the canned cannellini beans and haricot beans. Stir all together and cook for another 5 minutes.
