Serve this yummy dish for lunch or dinner, or whenever you want, either way, expect clean plates because this is so delicious that it will be gone in just a few minutes. Ingredients for Sausage Green Bean Potato Casserole:

  • 1½ pounds of chicken Andouille sausage, sliced into ¼-inch thick pieces
  • 2 pounds of baby potatoes, washed and halved
  • (15 ounces) cans of green beans, drained
  • 2 tbsp of garlic olive oil
  • 4 tbsp of butter
  • onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tsp of Creole seasoning
  • 1 tsp of garlic powder
  • 1 tsp of black pepper
  • ½ tsp of red pepper flakes
  • ¼ cup of chicken stock

How to Make Sausage Green Bean Potato Casserole:

Step 1

Preheat your oven to 400°F, then grease a baking dish with nonstick cooking spray, and set it aside. Prepare your potatoes, onions, and sausages, then place a skillet on a stove over medium heat, and heat some olive oil.

Step 2

Add the chopped onions to the hot oil followed by the sausage slices, then give them a good toss, and cook them until the sausages are browned and the onions are softened. Add the butter and let it melt, then add the garlic, and let them cook until fragrant before turning off the heat.

Step 3

Meanwhile, add the baby potatoes in a large bowl, then season them with Creole seasoning, garlic powder, black pepper, red pepper flakes, and some salt if desired, and give them a good mix.

Step 4

Once the sausages are ready, pour them into the large bowl of potatoes, then add in the drained green beans, and mix them until evenly combined. Taste and adjust the seasoning as desired, then pour in the chicken stock and give them a final mix.

Step 5

Pour the mixture into the prepared baking dish, then spread them evenly, and cover them with aluminum foil. Place it in the preheated oven, then let them bake for about 40 minutes or until fork tender, and serve immediately. Enjoy!
