Ingredients:

  • 1 can of pumpkin puree
  • 1 can of evaporated milk
  • 1 cup of packed brown sugar
  • 3 eggs
  • 2 tsp pumpkin pie spice
  • 1 tbsp vanilla extract
  • 1 box of spice cake mixture
  • 2 sticks of melted butter
  • 1 cup chopped pecans

Directions:

Step 1

Preheat your oven to 350 degrees F and grease a 9″ x 13″ casserole dish with nonstick cooking spray or butter. Set it aside. Next, in a large mixing bowl, add one can of pumpkin puree, one can of evaporated milk, 1 cup of packed brown sugar, three eggs, 2 tsp of pumpkin pie spice, and 1 tbsp of vanilla extract. Mix everything well until combined.

Step 2

Next, pour the mixture into your prepared casserole dish, then sprinkle one box of spice cake mixture over the top evenly. After this, add two sticks of melted butter and sprinkle 1 cup of chopped pecans. Place the casserole dish in the preheated 350 degrees F oven and bake for 45 to 50 minutes. After baking, let it cool just above room temperature, then serve it with some whipped cream, cool whip, or ice cream. Enjoy!
