Easy Panera Copycat Broccoli Cheddar Soup Recipe

Ingredients:

• 1 pound of broccoli, cut into chunks
• 4 tbsp of butter
• 1 onion, chopped
• 2-3 cloves of garlic, crushed
• 4 tbsp of flour
• 3 cups of chicken or vegetable stock
• Salt, to taste
• Pepper, to taste
• 1 tsp of paprika
• 1 large carrot, grated
• 2 cups of half-and-half or whole milk
• 8 ounces or 1 cup of cheddar cheese, grated

Directions:

Step 1

Place a large pot on a stove over medium-high heat, then add the butter, and let it melt before adding in the chopped onion. Toss and saute them for about 4 to 5 minutes, then add the crushed garlic, and continue to saute for another minute or until fragrant.

Step 2

Add the flour, then whisk them together consistently for about 1 to 2 minutes or until it turns golden brown, then pour in the stock, and add the chopped broccoli, grated carrot, salt, pepper, and paprika.

Step 3

Give them a good mix, then bring it to a boil, and reduce the heat to low to let it simmer for about 15 minutes. Add the cream and grated cheddar cheese, then stir them until incorporated, and allow it to cook for an additional 1 to 2 minutes. Turn off the heat, then serve, and enjoy!
