If you’re like me who also loves a good soup even if it’s summer, then you’ll surely love this recipe by Sip and Feast on YouTube. This one-pot dish is loaded with veggies and pasta, and it is super easy to prepare. You can serve this on the side of your favorite dish or eat it as is, either way, one thing is for sure, you’ll never get tired of eating this soup.
Step 1
Place a large Dutch oven on a stove over medium-low heat, then coat the bottom with olive oil, and add the chopped onion. Season them with some salt, then saute them for about 4 to 5 minutes until soft and translucent, and add the garlic cooking them for 2 to 3 more minutes or until fragrant.
Step 2
Sprinkle some red pepper flakes, then give them a good stir before adding the zucchini, and then continue to stir. Allow them to cook for about 8 minutes or until softened, then add the crushed tomatoes, mix well, and season them with more salt and pepper to taste.

Step 3
Next, add the water or stock, then give them a good stir, and bring it to a boil. Once boiling, test the doneness, then turn it to a simmer, and while simmering the veggies, cook the pasta according to the package instructions.
Step 4
Now, strain the pasta and put them straight to hte Dutch oven, then turn off the heat, and remove it from the stove. Add the chopped parsley and basil to the Dutch oven, then mix well, and adjust the flavor to taste. Serve it drizzle with more olive oil if desired, then top it with some shredded cheese, and enjoy!
