Ingredients for Old-Fashioned Butterscotch Pie:

  • 6 eggs, yolks, and whites divided
  • pie rounds
  • 4 cups of whole milk
  • 2 cups of brown sugar
  • ½ cup of sugar
  • ½ cup of butter
  • ¼ cup of flour
  • 10ml or 2 tsp of vanilla extract, divided
  • ¼ tsp of Cream of Tartar

Step 1

Preheat your oven to 350°F, then bake the pie crust for about 30 minutes, and while waiting prepare the custard base. In a large bowl, add the egg yolks, milk, and flour, then whisk them to combine, and set it aside.

Step 2

Place a saucepan on a stove over medium heat, then melt the butter, and add the brown sugar. Stir the mixture until dissolved, then slowly add the custard base or milk mixture, and make sure to stir continuously until combined and thick enough to coat the back of a wooden spoon, this will take about 20 minutes.

Step 3

Check if the crust is done baking, then remove it from the oven, and place it on the counter. Add 1 teaspoon of vanilla extract to the mixture on the saucepan, then give them a good mix, and pour the filling spreading it evenly.

Step 4

Increase the temperature to 400°F, then in the bowl of a stand mixer, add the egg whites, cream of tartar, sugar, and vanilla extract, and beat them over medium-high speed for about 4 minutes until stiff peaks form. Spread the meringue over the pie, then seal the edges, and bake it in the oven for about 15 minutes. Allow the pie to cool completely, then serve, and enjoy!
