Ingredients:

For the gelatin:

  • 2 tbsp of gelatin powder
  • 1/3 cup + 1 tbsp of milk

For the cheese mixture:

  • 2 eggs
  • 1/3 cup of cornstarch
  • 1¾ cups of milk
  • 1 tsp of vanilla bean paste
  • 1/3 cup of honey, or any other sweetener
  • 3 cups of low-fat-high protein cheese (farmer’s cheese, cottage cheese, white cheese, or cream cheese)
  • Orange zest

Directions:

Step 1

In a small mixing bowl, add the gelatin and milk, then mix them together until combined, and then let it bloom for about 10 to 15 minutes. In a saucepan, add the eggs, cornstarch, and ¼ cup of milk, then whisk them all together until smooth and there are no more lumps, and add the remaining milk. Continue to whisk them until incorporated, then place the saucepan on a stove, and turn the heat to low making sure to whisk constantly for about 5 to 7 minutes or until it thickens.

Step 2

Once thickened, turn off the heat, and add the honey and vanilla bean paste. Give them a good mix to combine, then add the cheese, and continue mixing them together until smooth and well combined before mixing in the orange zest. Melt the gelatin in the microwave for 15 seconds, then gradually add a few tablespoons of the cake mixture, and stir them until well combined.

Step 3

Pour everything back into the cake mixture, then give them a good mix until well combined, and pour it into a cake ring lined with a cake collar inside and aluminum foil at the bottom. Place it inside the refrigerator, then leave it for at least 6 hours up to overnight until completely set. Once ready to serve, unmold the cake, then decorate with fresh fruits, and serve. Enjoy!
