Meat Sauce

  • ¼ cup olive oil
  • 1 medium onion, diced
  • 1 pound of ground chuck
  • 1 pound of ground pork
  • 5 cloves garlic minced
  • ½ tsp crushed red pepper flakes
  • ½ cup dry white wine
  • 2 (28-ounce) cans of plum tomatoes
  • Salt and pepper, to taste
  • 5 basil leaves, chopped

Lasagna

  • 1 pound of broken lasagna noodles
  • 3 large eggs, beaten
  • 1 tsp coarsely cracked black pepper
  • ¾ cup Pecorino Romano cheese grated, divided
  • 1 cup ricotta
  • 3 cups mozzarella, shredded, divided
  • 3 tbsp basil, chopped
  • 3 tbsp flat leaf Italian parsley, minced
  • 3 tbsp olive oil

Directions:

Step 1

Place a pan on a stove over medium-high heat, then add the oil, and saute the onions for about 4 to 5 minutes until soft and translucent. Add the meat, then break it apart, and cook it for a few minutes. Remove the excess grease, then continue cooking until nice and brown, add the garlic, and give them a good toss to mix. Allow it to cook for a few more minutes, then season it with salt and pepper, and mix before adding the water.

Step 2

Give them a good mix, then let it cook until the liquid has reduced, add the plum tomatoes, and mix them together to combine. Cook them for about 20 to 30 minutes, then turn off the heat, and remove it from the stove. Mix in the basil, then taste and adjust the flavor as needed, and then boil water in a large pot. In a large mixing bowl, add the eggs, ricotta, Pecorino cheese, parsley, black pepper, and the meat sauce, then mix them all together, and set it aside.

Step 3

Put the pasta in the boiling water along with some salt, then cook them until al dente, and drain off the water. Add the cooked pasta to the meat sauce, then give them a good mix, and add the mozzarella cheese. Preheat your oven to 375°F at this point, then heat up a skillet pan, and coat it with oil. Transfer the pasta to the skillet, then add more cheese on top, and transfer the skillet to a baking sheet. Place it in the oven and allow it to cook for about 12 to 15 minutes, then serve, and enjoy!
