Ingredients:

  • 2 large eggs
  • ¾ cup white granulated sugar
  • ½ tsp vanilla extract
  • ½ cup melted butter
  • ¼ cup lemon juice
  • Zest 1 large lemon
  • ½ cup plain Greek yogurt
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 1½ cups blueberries
  • 2 tbsp flour

Lemon Glaze

  • 3 tbsp lemon juice
  • 1 cup confectioner’s sugar

Directions:

Step 1

Preheat your oven to 350°F, then line an 8*5-inch loaf pan with parchment paper, and set it aside. In a large mixing bowl, add the eggs, sugar, vanilla, and butter, then beat them together until smooth and creamy, and whisk in the lemon juice and plain yogurt until well combined and incorporated. In a separate mixing bowl, add the flour, baking powder, and salt, then whisk them together until well combined and uniform, and add this mixture to the egg mixture in batches making sure to whisk well in between each addition.

Step 2

Put the blueberries in a mixing bowl, then add 2 tablespoons of flour, and toss them until well coated. Put the coated blueberries in the prepared batter, then add the lemon zest, and fold them together until fully combined. Transfer the batter to the prepared loaf pan spreading it evenly, then put it in the preheated oven, and let it bake for about 50 t o6 0minutes or until a toothpick inserted at the center comes out clean.

Step 3

Once done baking, remove it from the oven, then unmold from the pan by lifting the parchment paper off, and place it on a wire cooling rack to cool down. While waiting for the bread to cool, prepare the lemon glaze by simply whisking together the lemon juice and confectioner’s sugar until desired consistency and sweetness, then drizzle over the loaf, and let cool completely. Serve and enjoy!
