Planning for dinner on a budget can be quite challenging, but not anymore with this recipe by The Hillbilly Kitchen – Down Home Country Cooking on YouTube! This yummy and loaded meal idea is so satisfying and inexpensive, too because you can use leftover ingredients in this recipe if you want. Plus, you can also swap other ingredients with what you have already available in your kitchen, or if you want, you can double the portion of each ingredient and add as much beef as you want if you need to feed a crowd.

Ingredients:

  • 2 bell peppers or frozen peppers
  • 1 pound of ground beef, kidney beans, or black beans
  • 1 onion, chopped
  • 4 cups of cooked rice
  • 1 can of tomato soup or other tomatoes
  • 2 cups of shredded cheese
  • Salt and pepper, to taste
  • Hot pepper and other spices, optional

Directions:

Step 1

Place a skillet pan on a stove over high heat, then add the beef, and break it apart. Allow it to sear without moving it for a few minutes, then season them with salt and pepper to taste, and then add the peppers and onions. Give them a good toss to combine, then put a lid on the pan, and allow it to cook while stirring occasionally to prevent the mixture from sticking at the bottom of the pan.

Step 2

Cook the beef to the desired doneness, then remove the excess grease if you want, and add the cooked rice and tomato soup. Stir them all together and scrape the bottom nicely, then add half the portion of cheese, and continue to mix them together until the cheese has melted and incorporated.

Step 3

Spread the mixture evenly on the pan, then turn off the heat, and add the remaining cheese all over the top. Place the lid back into the pan, then allow the remaining heat to melt the cheese or broil it in the oven until the top is nicely browned, and then serve. Enjoy!
