Step 1
Add some oil to the pot, press saute, then put it into a high setting, and let the oil heat up for about 3 minutes. Add the sliced bell peppers and onions, then give them a good toss, and saute for about 10 to 15 minutes or until nice and soft. Let the veggies rest for about 3 to 5 minutes, then add the broth, rice, seasoned salt, or creole seasoning, and stir them all together until combined and incorporated. Add the chicken pieces making sure that they are submerged in the broth, then press cancel, and start to pressure cook over a high setting for 15 minutes.

Step 2
Once done cooking, quickly release the pot, then use tongs to remove the chicken, and transfer them to a large mixing bowl. Shred the chicken using two forks or a hand mixer, then add the fajita seasoning as well as the cheese, and stir them until well combined. Put the shredded chicken back into the pot, then give them a good stir to incorporate the chicken into the soup, and serve them in bowls topped with cheese, guacamole, and/or tortilla strips.
