Ingredients:

  • 4 lb Yukon potatoes (peeled and quartered)
  • 1 & 1/3 cups whole milk (or half and a half)
  • 6 cloves garlic (crushed or minced)
  • 1 & 1/2 tsp salt (or to taste)
  • 8 tbsp unsalted butter (softened + more to serve)
  • 1/4 cup sour cream (optional)
  • 2 tbsp chives (to garnish)

Directions:

Step 1

Rinse the potatoes, then peel and quarter them. Next, drain the potatoes and transfer them into a pot. Add enough cold water to the pot to cover the potatoes. Bring it to a boil, then reduce the heat to a simmer and continue cooking for about 15 to 18 minutes or until the potatoes are easily pierced with a fork. While waiting for the potatoes, peel and smash six garlic cloves, then transfer them to a small saucepan. Add 1 & 1/3 cups of whole milk, then place over medium-low heat, stirring occasionally, and continue cooking just until you see steam, then take it off the heat.

Step 2

Back to the potatoes, drain them well, then start mashing them using the masher of your choice. (A classic potato masher or a potato ricer.) After roughly mashing it, add the steaming hot garlic milk through a small strainer. (Add the hot milk to your desired consistency.) Continue mashing the potatoes. To finish, add 8 tbsp of softened unsalted butter along with 1/4 cup of sour cream and 1 & 1/2 tsp salt. (The sour cream is optional.) Once done, transfer the mashed potatoes to a serving bowl. Garnish with some freshly chopped chives.
