These yummy energy bars are the perfect treat to enjoy for a snack, dessert, or even breakfast! It’s a simple recipe that you can prepare quickly and easily with only a few steps. What’s even better is that this requires no baking at all.

Ingredients for Fruit & Nut Energy Bars:

  • 2 cups of Medjool dates, pitted and chopped
  • 2 cups of cashews, raw
  • 1 cup of unsalted almonds, raw or toasted
  • ¾ cup of high-quality unsweetened cocoa powder
  • 2 tbsp of coconut oil
  • ½ cup of unsweetened shredded coconut
  • 2 tsp of vanilla extract
  • 1-2 tbsp of cold espresso coffee or water
  • ½ tsp of kosher salt or ¼ tsp of fine salt
  • A very small pinch of cayenne

Step 1

Remove the seed of each date and chop them nicely, then add them to the food processor, and add in the cashews, almonds, shredded coconut, and cocoa powder.

Step 2

Melt the coconut oil, then add it into the food processor as well followed by the vanilla extract, cold espresso, salt, and cayenne, and process them until everything comes together and is fully combined.

Step 3

Transfer the mixture to a baking dish lined with plastic wrap, then press it down evenly and flatly, and cover them with the excess plastic nicely.

Step 4

Place them in the fridge, then let them chill for at least 2 to 3 hours or until firm enough to cut cleanly, once ready, cut them into bars evenly.

Step 5

To store them, wrap each bar in parchment paper first, then tie it securely with a string, and store them in the fridge until ready to serve. Serve and enjoy!
