Slice the onions thinly, then add them to the slow cooker, and add the butter, brown sugar, a teaspoon of salt, sherry vinegar, and Worcestershire sauce. Cover it with the lid, then let it cook over a high setting for about 8 to 9 hours or over a low setting for about 12 to 14 hours until nicely browned and caramelized, and make sure to stir them well halfway through the cooking process.
Pour the beef stock, then season it with salt and pepper, and add the thyme sprigs and bay leaves. Cover it again with the lid, then continue to cook over a high setting for about 2 to 3 hours or over a low setting for about 4 to 5 hours, and once done, remove the thyme sprigs and bay leaves. Preheat your oven to broil and place the baguette slices on a baking sheet.
Next, broil them for about 1 to 2 minutes on each side until nice and golden brown. Now, divide the onion soup into two bowls, then top them each with baguette slices, and add lots of shredded cheese at the top. Put them in the oven and let them broil for about 2 minutes or until the cheese is melted and bubbly. Serve immediately and enjoy!
