Easy Cowboy Caviar Recipe

What’s not to love about Chili Pepper Madness‘ easy cowboy caviar recipe? It’s fresh, healthy, quick to prepare, and surprisingly delicious. No wonder it became famous. It is packed with black-eyed peas, black beans, avocado, corn, tomatoes, bell peppers, and onions. Of course, it will not be complete without the homemade dressing. You will instantly love it once you take a bite. You can serve it as a salad or dip with tortilla chips.

To be honest, I was not expecting much of this salad. But when I got that first scoop, I was so surprised. The flavors of the salad with the vinaigrette are amazing. It is great for any picnic, potluck, or any party. You can serve it right away, but letting it chill for an hour or two will allow the flavors to marry, just be sure to add the avocado just before serving to avoid browning.

Cowboy Caviar Ingredients

• 1 can (15 oz) of black-eyed peas (drained and rinsed)
• 1 can (15 oz) of black beans (drained and rinsed)
• 2 jalapeno pepper (diced)
• 1 red bell pepper (diced)
• 2 roma tomatoes (diced)
• 2 cups of chopped red onion
• 2 ears of fresh sweet corn (removed from husks)
• 1 avocado (diced)
• 1/2 cup of fresh chopped cilantro

For the dressing:

• 1/4 cup of olive oil
• 1/4 cup of apple cider vinegar
• juice of 1 lime
• 1 teaspoon of cayenne powder
• 1 teaspoon of ancho chili powder
• 1 teaspoon of garlic powder
• 1 teaspoon of onion powder
• 1 teaspoon of cumin
• 1 pinch of sugar
• salt, pepper, and chili flakes to taste

How to Make Cowboy Caviar

Step 1:

In a large mixing bowl, add all the dressing ingredients and whisk them all together. Set aside for later.

Step 2:

Make the salad. Add all the ingredients in a large mixing bowl, and give them a quick mix.

Step 3:

Pour the dressing onto the salad. Mix until everything well combined.
