For the coconut filling:
For the chocolate ganache
Start by preheating your oven to 350F. Next, grease the sides and bottom of a 8 x 8 inch or 9 x 9 inch baking pan with butter, then line with parchment paper.
In a medium bowl, add the chocolate and butter. Melt using the double broiler method while stirring occasionally until smooth. Once melted, remove the pan from heat but keep the bowl over water.
Stir in instant coffee and sugar. Remove the bowl from the pan, then lightly cool.
Add the eggs one at a time into the mixture, mixing after every addition. Mix in the vanilla extract, followed by the flour, salt, and cocoa powder.
Transfer the batter into the prepared pan and bake it for about 30 minutes or until a toothpick comes out with a few moist crumbs when inserted in the center. Once done baking, let them cool completely.
In a mixing bowl, add sweetened condensed milk and coconut flakes and mix until well combined. Spread evenly on top.
Make the chocolate ganache. Add the cream in a small saucepan and place over heat. When it starts to boil at the edges, remove it from heat and pour it over the chopped chocolate. Let it sit for about a minute, before stirring. Once smooth, spread evenly over the coconut layer.
Refrigerate for at least an hour before slicing.
