Ingredients for Pineapple Coconut Cake:

Cake

  • 1 (15.25 ounces) box of yellow cake mix
  • 1 cup of water
  • 3 eggs
  • ½ cup or 1 stick of butter, melted
  • 20 ounces of crushed pineapple, divided, 1 cup drained
  • 1 cup of coconut
  • ¼ cup of chopped pecans

Glaze

  • 1½ cups of powdered sugar
  • 1 cup of reserved crushed pineapples
  • ¼ cup of butter, melted
  • ½ cup of coconut
  • ¼ cup of chopped pecans

How to Make Pineapple Coconut Cake:

Step 1

In a large mixing bowl, add the yellow cake mix, water, eggs, melted butter, drained crushed pineapple, coconut, and chopped pecans, then whisk everything together until well combined, and make sure to not overmix.

Generously spray the crockpot with a nonstick cooking spray, then pour in the batter, and spread it out evenly until the top is smooth and level. Cover the crockpot with the lid, then let it cook on a high setting for about 2 hours without removing the lid.
