Heads up potato fans, I’ve got a yummy and super easy recipe that you can make in less than 30 minutes! This must be the best and easiest potato recipe out there that can be prepared without compromising the overall taste, it is also very simple in terms of ingredients because you won’t be needing much except potatoes and cheese, the rest of the seasoning you can substitute or remove depending on your preference. Ingredients:

  • 700 grams (1.5 pounds) of small yellow potatoes
  • 1 tsp of salt
  • Spring onion, chopped
  • 115 grams (4 ounces) of mozzarella cheese
  • 2 cloves of garlic
  • 2 tbsp of butter
  • 1 tbsp of olive oil or any cooking oil you prefer
  • ¼ tsp of crushed red pepper
  • ¼ tsp of black pepper
  • ½ tsp of sweet paprika
  • ½ tsp of salt

Directions:

Step 1

Wash and peel the potatoes well, then place them inside a medium or large pot, and fill the pot with water just enough to totally submerge the potatoes. Sprinkle it with 1 teaspoon of salt and let it cook for about 12 to 15 minutes until tender. While waiting for the potatoes to cook, chop your spring onions, then grate 4 ounces of mozzarella cheese, and mince 2 cloves of garlic, set them all aside.

Step 2

Once the potatoes are done cooking, drain them off from water, and set them aside as well. Prepare a pan and place it on a stove over medium heat, add 2 tablespoons of butter and let it melt before adding in 1 tablespoon of olive oil. Add in the garlic, then season it with crushed red pepper, black pepper, and sweet paprika. Give them a good stir until incorporated, then sprinkle some salt, and add in the drained baby potatoes. Fry it over medium heat for about 1 to 2 minutes, then add in chopped spring onion, and sprinkle the grated mozzarella cheese. Cover it and cook over low heat for about 2 minutes or until the cheese has melted. Serve and enjoy!
