These campfire potatoes can be cooked on an open fire, grill, or oven. It doesn’t require a lot of cleaning since the potatoes will be cooked in foil packets. Delicious Campfire Potatoes

  • 2 lb of mini Yukon gold potatoes (quartered)
  • 2 tablespoons of extra-virgin olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • kosher salt
  • freshly ground black pepper
  • 2 cups of shredded mozzarella
  • 1 cup of freshly grated parmesan
  • chopped fresh parsley (for garnish)
  • crushed red pepper flakes (for garnish)

 

How to Make Campfire Potatoes

Step 1:

Start by preheating the grill to medium-high, or preheating the oven to 425F.

Step 2:

Cut 4 sheets of foil about 10″ long each. In a large bowl, add the potatoes, olive oil, garlic powder, oregano, salt, and pepper. Toss to coat.

Step 3:

Equally divide the potatoes between foil pieces, then fold each one crosswise to cover the potatoes. Roll the top and bottom edges to seal them closed.

Step 4:

Place each foil packet on the grill and cook for about 10 to 15 minutes until just cooked through. Alternatively, you can bake it in the oven for 15 minutes.

Step 5:

Open the packets, and sprinkle mozzarella and parmesan on top of the potatoes. Reseal the foil packets and cook until the cheese is melted for about 5 minutes.

Step 6:

Sprinkle parsley and red pepper flakes on top. Serve and enjoy!
