Bring a large pot of water to a boil. Next, take out the core of your cabbage, then put the cabbage, core side down, in the boiling water. Cover the pot and reduce the heat so it will just kind of simmers for about 10 minutes. After this, start preparing your filling. In a pan over medium-high heat, put 1 tbsp of olive oil, then saute the chopped onion and garlic for 3 to 4 minutes. After 4 minutes, add the diced mushrooms and saute together for another 2 minutes, then transfer them to a bowl and set aside. Back to the cabbage, take it out of the pot, and just kind of separate the leaves using forks and let it cool off. Now, add 3/4 cup of uncooked long grain rice into the mushroom mixture followed by 1/4 cup of chopped parsley, 1 & 1/2 tsp of salt, black pepper to taste, 1 lb ground sirloin, and 1 cup strained tomatoes. Mix this all up using your hands.

Next, separate the leaves of the cabbage. For each of the leaves you’re going to roll with, take a sharp small knife and cut off the white stem part of the cabbage. After this, prepare your pan, stuffing, and the plate where you’re going to roll. Now, get one leaf of cabbage, take a big scoop of filling and put it in the leaf, then roll it, turn the edges, and keep rolling. After this, put it in the pan, seam side down. Do this step to the rest of the cabbage leaves left. After this, pour 3/4 cup of liquid over the top of whatever you choose. (It can be beef stock, cabbage water, or a combination of leftover tomato and cabbage water.) Put over the broken cabbage leaves on top to cover the rolls up, then cover the pan with foil and put it in the oven at 350 degrees F for 1 & 1/2 hours.
