Ingredients:

Cowboy Dip

  • 12 ounces of hot Italian sausage links, casings removed
  • 2 (8 ounces) packages of cream cheese, room temperature
  • 1 cup of sour cream
  • 4 ounces of sharp Cheddar cheese, grated
  • 2 cups of frozen sweet corn, thawed and drained
  • 1 (14 ounces) can of fire-roasted diced tomatoes with green chiles
  • 1 (4 ounces) can of Hatch green chiles, diced
  • ½ cup of fresh jalapeño peppers, diced
  • ½ cup of green onions, sliced
  • 1 teaspoon of kosher salt
  • ½ teaspoon of freshly ground black pepper
  • A pinch of cayenne pepper or to taste

Topping

  • 2 tablespoons of sharp Cheddar cheese, grated
  • A pinch of cayenne pepper or to taste
  • 1 teaspoon of sliced green onion or to taste

Directions:

Step 1

Remove the casing of the sausages and place them on a pan, then use a spoon or flat wooden spatula to break them up, and let them cook over medium heat until they start they are browned and crumbly or for about 10 to 12 minutes. Remove it from the heat and drain the excess grease if desired. Grab a large mixing bowl, then combine the cream cheese, sour cream, 4 ounces grated Cheddar, thawed corn, cooked sausage, fire-roasted tomatoes with chiles, Hatch chiles, jalapeño peppers, green onions, salt, pepper, and cayenne pepper. Mix them thoroughly until well combined.

Step 2

Prepare a baking dish, then transfer the mixture, and smooth it out evenly at the top. Sprinkle the remaining cheddar cheese on top as well as some cayenne pepper. Place the baking dish on a sheet pan and bake it in the center of a preheated oven at 425°F or 220°C until cheese is melted and the dip is bubbling around the outside or for about 30 minutes. Garnish it with green onions before serving.
