Meatballs and pasta is a taste from my childhood I’ll never lose, but recently I saw a bold new twist this old favorite of mine. I found this awesome meatball casserole video recipe tutorial by Food Fusion on YouTube. This recipe had artisan bread at the bottom instead of noodles, and the entire recipe is cooked in my other favorite thing in the whole world, my trusty casserole dish. I could not believe my luck, I had to make them immediately and luckily I had just enough time to make this flavorful extravaganza happen in time for dinner. The directions were ever so easy and I always keep frozen ground beef on hand from Costco or Sam’s Club and you know I always have plenty of my delicious tomato sauce on hand, because I can’t live without that! The ingredients were so simple as well, I knew this recipe was going to be a slam dunk win for my family’s taste buds.

Ingredients:

  • 1 pound of ground beef
  • 1/2 cup breadcrumbs
  • salt and pepper (to taste)
  • 1 to 3 cloves of garlic (to taste)
  • 1/2 teaspoon allspice
  • 1 teaspoon chicken bullion
  • 1 medium onion (finely chopped)
  • 1 tablespoon fresh cilantro
  • 1 egg
  • 2 tablespoons of milk
  • 2 tablespoons oil
  • 1 can of chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1/2 tablespoon sugar
  • 2 tablespoons mayonnaise
  • 1/2 cup cream cheese
  • Italian bread (sliced)
  • Mozzarella cheese (grated)

Then, you line the bottom of the casserole with the sliced Italian bread and cover with the cream cheese mixture, then add the other ingredients and bake.
