This Doritos casserole recipe by Catherine’s Plates tutorial on YouTube has a Southwestern Tex Mex flair. I’ve never had a Doritos casserole, but it looks amazing and I would top it off with fresh crushed Doritos in the end. If you’re looking for a new way to make Mexican, this is a great recipe with a different twist. A lot of the ingredients are canned, so there’s a lot of dumping and cooking. One of my favorite things about casseroles would be adding a bunch of cheese on top and having it super cheesy. I know this would be a great dish to reheat for days of leftovers for the week.



  • 1 1/2 lb Ground Beef
  • onion, chopped
  • 1 tsp garlic minced
  • 3 tbsp taco seasoning or 1 pkg
  • 1 can corn, drained
  • 1 (14.5 oz) can diced tomatoes
  • 4 oz can diced green chilis
  • 1 cup Sour Cream
  • 5 cups Doritos chips, nacho cheese flavor (2 cups smashed into small pieces, 3 cups broken into large pieces)
  • 2 cups Monterey jack cheese shredded divided
  • green onions, sliced for garnish


First, preheat the oven at 350F. In a large skillet, brown ground beef with onion until beef is fully cooked and onions are soft. Add the rest of the ingredients and stir until combined.
