This sausage and potato casserole by Smokin’ & Grillin’ wit AB tutorial on YouTube looks so creamy and cheesy for a nice breakfast meal. It’s a good brunch idea that has a lot of flavors, and you can top it off with veggies. I think I would add vegetables in the crockpot to make it more hearty and wholesome. I want to make some now because it’s so easy to make. I love potatoes and sausage so this would be a great casserole combination. Plus, I think this can cater to a lot of picky eaters because there no greens in this recipe. There are endless possibilities with this recipe, and you can add bacon if you prefer over sausage. AB’s recipes are so easy to follow along with, and that’s why I love watching his videos.

Ingredients:

  • 5 cups of cubed Potatoes or 1 32 oz. bag of Hash Browns
  • 2 – 4 Andouille Sausages, quartered
  • 2.5 – 3 cups shredded Cheddar Cheese
  • 1 medium Yellow Onion, diced
  • 1 10.5 oz. can of Cream of Chicken
  • 1/2 cup Milk
  • 1/2 cup Sour Cream
  • Salt and Pepper to taste

Directions:

Note: you can use frozen potatoes and they will cook faster if you want to save some time. Cheesy potatoes are such a comfort food, and this would be great to make for the kids too. This is a good way to make a dish that will serve a big group. Also, serve this for a dinner side dish, and gives me another crockpot meal idea.
