I love any kind of chicken casserole, but I had never thought of making one in my crockpot, but after seeing this wonderful recipe by The Magical Slow Cooker, on YouTube, I had to try this idea! I already had the ingredients, and the recipe was so easy, there was no stopping me from serving this delicious crockpot fiesta casserole to my family that very evening.

Ingredients For The Crockpot Fiesta Casserole:

  • 1 1/2 pounds of boneless chicken breasts
  • 1/4 teaspoon of pepper
  • 1/4 garlic powder
  • 1 can of cream of chicken soup
  • 1/2 cup of white onion (diced)
  • 1 can of Mexicorn
  • 1 seeded jalapeno

  • Box of farmhouse Spanish rice
  • 14-ounce can of diced tomatoes
  • 2 tablespoons of salted rice
  • 1 1/2 cups of water to make the rice
  • 3 cups of shredded sharp cheese
  • 1/2 cup sour cream
