Two of my favorite dinners during the cold months of the year are chicken pot pie and homemade stew. I never knew that these two dishes could be combined until recently when I tried out this new recipe. I was amazed by how easy this chicken pot pie stew was to make, which is why it is a great meal for busy families. All the ingredients just go in your crockpot and cook up to make a savory, hearty stew that makes a perfect easy dinner idea, especially for cold winter nights.
Just last week I had to work more than I usually do, sacrificing the time I usually spend time with my kids and focusing on making dinner for them. After the third day of this tireless cycle, I reached out to a friend of mine for an easy recipe that I could make that night. She gave me a list of ingredients and told me the meal prep, which I questioned if it was actually as easy to make as she made it seem, and I stopped by the store after work to buy ingredients for the chicken pot pie stew. When I got home, I realized that there was truly no hassle in making this meal at all and it is simple as loading ingredients in a crockpot. However, my favorite part of this meal is definitely all the flavor that it has, which my kids absolutely loved and requested it again this week! Let me show you how easy it is to make:
Begin by cutting the chicken breasts into cubes, quartering the medium red potatoes ( you can choose to leave the skin on or to peel them) and chopping a cup of celery.
Put the chicken, potatoes, and the celery into the slow cooker along with the baby carrots, condensed cream of chicken soup, chicken bouillon, garlic salt, celery salt, and black pepper. Then mix all of the ingredients together and cook on high for 5 hours.
Stir in the 1 ounce bag of frozen vegetables and cook for 1 more hour.
