For the dipping sauce:
Start by cutting green tomato into slices. Lay them flat in your work surface and sprinkle both sides with salt to draw out the moisture. Let it sit for about 15 minutes, then using a paper towel remove the extra liquid.
Get three shallow bowls – (1) flour, (2) whisked egg, (3) corn flour with breadcrumbs, Louisiana fish fry, and salt.
Coat the tomato slices with flour, dip into the egg, then coat with the corn flour mixture.
Add a generous amount of oil into a pan over heat. Once it reaches, 350F, add the coated tomato slices and cook each side until brown and crunchy. Once done, place on a wire rack lined to remove excess oil. Sprinkle salt on top.
Make the dipping sauce by combining all ingredients in a bowl.
Serve the fried green tomatoes with the dipping sauce.
