Summer is the best time for salads. One of my highly recommended salad recipes is Break the Spice‘s cucumber tomato avocado salad. It is refreshing,  delicious, and packed with amazing flavors! I love that the ingredients are very simple. It only uses extra virgin olive oil and lime juice for the dressing, which makes the flavors of the herbs, fruits, and vegetables stand out. Some recipes use too much dressing that overpowers the taste of the salad, which I do not prefer.

Easy Cucumber Tomato Avocado Salad Ingredients

  • 1 large cucumber or 2 small cucumbers
  • 3 regular tomatoes or 0.5 lb of cherry tomatoes
  • 1 medium onion
  • 1 to 2 avocados
  • 5 stems of dill
  • 5 stems of cilantro or coriander
  • 5 stems of mint
  • 1 teaspoon of lime juice
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of toasted pumpkin seeds or pistachios
  • salt and pepper to taste

How to Make Cucumber Tomato Avocado Salad

Step 1:

Start by thoroughly cleaning the vegetables and herbs. Use 1 teaspoon of baking soda per 34 oz of water. Soak all the vegetables for half an hour, then rinse them with running water.

Step 2:

Get some paper towels and dry the herbs. This will keep them from getting soggy.

Step 3:

Slice cucumber and onions into small pieces. Dice the tomatoes and avocados into small cubes, then finely chop the herbs.

Step 4:

Add all the chopped vegetables and herbs (except the avocado) into a large bowl followed by 1 teaspoon of lime juice, 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Using a wooden spoon, gently mix all the ingredients together until well combined. Make a taste test and adjust seasonings if needed.

Set the salad aside for 15 minutes. This step will allow the vegetables to soak all the flavor. You can store it in the refrigerator for up to 24 hours.

Step 5:

Just before you serve the salad, gently mix in the diced avocado. Garnish with toasted pumpkin seeds or pistachios to add some crunch and nutty flavors to your salad. Serve and enjoy!
