Ingredients:

  • 2 tbsp olive oil
  • 1/1 lb (500g) pork shoulder steaks (chopped into large chunks)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 medium onion (peeled and chopped)
  • 12 – 14 button mushrooms (sliced)
  • 2 cloves of garlic (peeled and crushed)
  • 1 cup (240ml) dry cider
  • 1 & 3/4 cups (420ml) chicken or vegetable stock
  • 1/2 tsp dried sage
  • 1/3 cup (80ml) double or heavy cream
  • 2 dessert apples (sliced into wedges)
  • fresh sage leaves to serve
  • fresh thinly sliced apple to serve

Directions:

Step 1

Preheat the oven to 325 degrees F. Next, heat 2 tbsp of olive oil in a flame-proof large casserole dish until hot. Add the chopped pork to the pan along with 1/2 tsp each of salt and pepper. Cook the meat until brown on each side (about five to six minutes.) Turn the heat down to medium and add in the diced onion and 12 to 14 button mushrooms that have been sliced in half. Cook for 5 minutes, stirring occasionally until the onion softens. Add in 2 cloves of minced garlic and cook for a further minute. Now, sprinkle over 2 tbsp of all-purpose flour and stir it. Add 1 cup of dry cider followed by 1 & 3/4 cups of chicken stock and 1/2 tsp of dried sage.

Step 2

Turn up the heat and bring it to a boil and stir and scrape up any bits that might have stuck to the bottom of the pan. After this, place a lid on the pan and put it in the oven for about 90 minutes. After 90 minutes, remove the casserole from the oven, stir in the sliced apples, and 1/3 cup of double or heavy cream. Place the lid back on and put it back in the oven for another 25 minutes. After 25 minutes, remove it from the oven and stir it. Serve.
