If you can’t get enough of it, like me, you will be thrilled to learn you can learn how to make this copycat cheesecake factory dessert at home, and it really is pretty simple to do. Make one of these, and you and your family can have as much cheesecake as you want – without having to pay $10 a slice or drive to the restaurant to eat some.

My daughter and I absolutely love the Cheesecake Factory’s raspberry cheesecake but we only get to eat there once a year for her birthday. When she was about to graduate from 8th grade, I searched the internet looking for a copy recipe of that cheesecake I would surprise her with on the last day of school. I was shocked how easy this recipe was to follow, and when I presented the cake to my daughter and her friends they just couldn’t seem to get enough of it. I am so pleased with this cheesecake I now make it at least once a month for family gatherings, church get potlucks, and for all my kids birthdays. Just look how easy this is to make:

  • 1 1/2 cups Graham Cracker Crumbs
  • 1/4 teaspoon Cinnamon
  • 1/3 cup Melted Butter
  • (4) 8 oz packages of Cream Cheese
  • 1 1/4 cups Sugar
  • 1/2 cup Sour Cream
  • 2 teaspoons Vanilla Extract
  • 5 large eggs

Topping Ingredients:

  • 1/2 cup sour cream
  • 2 teaspoons sugar

Step One

Start by making the crust by mixing together graham cracker crumbles, cinnamon, and melted butter in a small bowl. Make sure to stir thoroughly and avoid having any large clumps before pouring the mix into a springform pan. Once evenly distributed in the pan, cover the rim of the pan in tin foil and store in the freezer until the filling is prepared.

Step Two

Next, make the filling by putting cream cheese, sugar, sour cream, and vanilla extract into a mixer and mix until smooth. Once you see that all the ingredients are thoroughly mixed, add beaten eggs and mix again. Then pour the batter on top of the crust and place the cake into the oven and cook at 350 degrees for 55 minutes.

Step Three

While the cake is in the oven, make the icing by mixing only sour cream and sugar. Once the cake is out of the oven all you need to do is spread the icing and refrigerate for at least 4 hours. Enjoy!
