Ingredients:

  • 3 cups of milk, room temperature
  • 2/3 cups of sugar
  • 1 tbsp + ¼ tsp of agar agar powder or gelatin
  • 8 ounces of dark or bittersweet chocolate, 55-70% cocoa
  • 1 tbsp of instant coffee powder, optional

Directions:

Step 1

Grab a medium-sized pot and pour in the milk, sugar, and agar-agar, and set them aside for a few minutes to soak. While waiting, start chopping the chocolate finely and thinly so that they’re easier to melt in the mixture, then set them aside as well. Place the pot of milk, sugar, and agar-agar on a stove over medium-low heat, then bring it to a simmer. Whisk it around constantly to avoid the milk from burning at the bottom of the pot and to help dissolve the agar-agar completely. Once it starts simmering, lower your heat, then add in the coffee powder and chopped chocolate, and mix them together until dissolved and well combined. Let the mixture boil for about 6 to 7 minutes over low heat while mixing constantly until you get a smooth and hot chocolate mix.

Step 2

Pour this mixture into a loaf pan, then let it cool down at room temperature before popping it in the refrigerator, then leave it there for at least 2 or 3 hours until it has completely set. Once the chocolate pudding is set, place the mold into a pot of warm water for about 90 seconds or more, then gently separate the sides, flip it over onto a serving plate, and tap on the back of the mold lightly. If this doesn’t work, you can poke and insert a flat spatula on the sides to ease the vacuum effect and incorporate air at the bottom of the loaf pan, this will make it release the chocolate easier. Heat a knife over the stovetop before slicing.
