Valentines day is around the corner. This recipe for chocolate covered cheesecake not only shows your loved one of how creative you can get in the kitchen, but it also shows how well you can cook since it is so easy to make! With no baking required, this is the perfect dessert recipe for Valentines day.
When I recently realized Valentines day was only a week away, I decided to hop on the internet searching for recipes for desserts I could make. Every year, my husband gets excited for chocolate covered strawberries that I make for him, but this year I wanted to surprise him with a little bit different. I found this recipe and tested it out last this past weekend and OMG, I have now words to describe how much I loved it. It surprised me how easy cheesecake can be to make and taste so good with no baking required. I plan on making a few batches of these mini cheesecakes and gifting them to all of my friends and family.
Begin by making the crust by mixing graham cracker crumbs, sugar, and butter together in a bowl. Then fill the bottoms of the cheesecake pans with the crust and then press flat with the bottom of a cup.
Make the chocolate to dip the strawberries in by poring the heavy cream into a bowl with the chocolate. Mix the two together until uniform. Then dip the strawberries, with the stems cut off, in the chocolate before leaving them out to dry.
Next, make the filling for the cheesecake by mixing the cream cheese, powdered sugar, vanilla, salt, heavy cream, and gelatin powder all together in a bowl by using a hand mixer.
Place a chocolate covered strawberry in each cake mold, on top of the crust, and then fill with the cheesecake filling. Although this cheesecake doesn’t need to me refrigerated, it is recommended.
