In need of an inexpensive recipe idea for your meal? Try these super easy and simple fritters made out of canned tuna by The Hillbilly Kitchen – Down Home Country Cooking on YouTube! They may sound simple but they’re still super delicious, you can pair them with rice, or noodles, or use them as patties for your sliders. Whichever it is that you choose, surely it will be a hit.

Ingredients:

  • 1 can of tuna
  • 1 egg, beaten
  • ¼ cup of Cornmeal mix, flour, cracker crumbs, or breadcrumbs
  • Salt, to taste
  • Pepper, to taste
  • Oil, butter, or bacon grease, for frying
  • 1 tablespoon of lemon juice or pickle juice
  • Spices or seasonings of your choice
  • Chopped onions
  • ¼ cup of shredded cheese

Directions:

Step 1

In a large mixing bowl, add the whole content of one canned tuna, juice and all, one beaten egg, cornmeal mix (you can also use flour, cracker crumbs, or breadcrumbs), lemon juice, and chopped onion. Season them with salt and pepper to taste, then add some shredded cheese of your choice. Mix them all together until they are well combined and they are sticking together. Press them all together so they’re one piece and set them aside.

Step 2

Place a large and deep cast-iron skillet pan on a stove over medium-high heat, then add in the cooking oil (you can use some leftover oil, butter or bacon grease), and let it heat up. To test whether the pan and oil are hot enough, take a really small piece of the tuna mixture and put it in the oil, if it starts to bubble, then you’re ready to start deep-frying. Scoop out the tuna mixture however big or small you want, shape them into a ball between your palms, then put them in the pan, press and flatten the tuna. Let them cook evenly on both sides until nice and crispy or the color turns golden brown. Serve it paired with rice, noodles, or some buns.
