As simple as it sounds, breakfast grilled cheese with soft scrambled eggs is an easy, delicious sandwich. I love grilled cheese and eggs. Specifically, soft scrambled eggs are my ultimate favorite on how I like my eggs prepared for breakfast. Over easy eggs comes in second place though. Breakfast is my favorite meal of the day, and I know most people skip out on it. I love egg sandwiches, and you can also add slices of bacon too. This breakfast sandwich is plain for me so I would add slices of avocado and tomatoes as well. You can dress it up or keep it the way it is too. I think that’s one of the best things about recipes. Ingredients:

  • 2 slices of sandwich bread
  • butter
  • 1 tsp milk
  • 2 eggs
  • salt and pepper, to taste
  • 1 slice American cheese
  • Mozzarella cheese

Directions:

First, butter the pan and then beat your eggs in a small bowl with salt, pepper, and milk. The tip on making soft scrambled eggs would be stirring them consistently so they do not get overcooked. If you do not like your eggs runny, cook them on the stove for longer.

Next, layer the sandwich with different types of cheese to make it super cheesy and scrambled eggs. Make sure to butter each slice of bread thoroughly with butter. Cover the pan for about 3 minutes on low heat. This helps melt the butter slowly without burning the bread.
