I am such a big fan of the Cheesecake Factory, I absolutely love everything they serve, especially the mini cheesecakes that they make! When I saw this recipe for a similar mini cheesecake idea like the Cheesecake Factory serves, I went wild. The wonderful Youtuber by the name of El Mundo Eats, on YouTube, really has done an excellent job on this awesome mini blueberry cheesecake tutorial, it is an absolute pleasure to watch and I cannot recommend these mini cheesecakes enough because they are not only delicious, they are just gorgeous, and look wonderful on any table.

Ingredients For The Blueberry Mini Cheesecakes Recipe:

For The Base: 

  • 1/2 cup of walnuts
  • 1/2 cup of almond flour
  • 1 tablespoon of maple syrup

For The filling:

  • 2/3 cup of fresh blueberries
  • 1 tablespoon of lemon juice
  • 16 ounces of cream cheese (softened)
  • 1/2 cup of sweetener
  • 1 & 1/2 teaspoon of powdered gelatine
  • 1 tablespoon of water
