
So the New Year’s resolutions have not been quite as resolute as I had hoped, and I find myself trying to get back on track with my plans to lose a little weight this year. Can anyone else relate?
Diets are not all they are cut out to be, and I tried a few earlier this year. It really comes down to what I am cooking, and not all the things I make are healthy. My favorites foods are not exactly the healthiest, but I knew there were some better healthy versions of them. I went looking for the best low fat recipes I could find and have been trying them out these past few weeks. Honestly, I am pretty surprised at how incredible some of these are, healthy, but still super satisfying and delicious. I did not even tell my husband or kids these were low fat, either, and they had no idea! How impressive is that?

15. Roasted Spaghetti Squash with Parmesan Mushrooms

Spaghetti squash is my favorite swap when I want pasta night without the pasta. Roasted and tossed with mushrooms, spinach, garlic and parmesan, it comes out cozy rather than punishing, and it happens to be vegetarian and gluten free. Well Plated has the recipe.
17. Grilled Chicken Kabobs with Garlic Yogurt Sauce

Kabobs are my answer to a summer evening when I cannot face the oven. Juicy chicken and colorful vegetables grilled until smoky, with a cool garlic yogurt sauce for dipping. My family eats them straight off the skewer. Get the recipe from Well Plated.
27. Sheet Pan Chicken with Rainbow Vegetables

One pan, lean chicken, and broccoli, sweet potato and zucchini all roasting together with lemon and parmesan. I make this on the nights when I want dinner and no pile of dishes afterward. It is quick and it genuinely tastes good. Well Plated wrote it up.
28. Creamy Mushroom Zucchini Pasta

This one feels indulgent and is not, which is exactly the trick I am always after. A silky sauce, the texture of mushrooms against fresh zucchini, and plenty of vegetables hiding in there. I make it when I want comfort food without the aftermath. Skinny Spatula has it.
33. Lighter Kung Pao Chicken

Takeout kung pao is one of my genuine weaknesses, so a version with all the sweet spicy flavor and far less oil was always going to win me over. The bold flavors survive completely intact. I have stopped ordering it out. The recipe lives at Well Plated.
34. Cucumber, Tomato & Avocado Salad

There is no cooking at all here, which in August is the entire point. Cucumber, tomato and avocado with a bit of dressing, and it goes with nearly everything I put on the table. It is my go to summer side. A Couple Cooks has the recipe.
37. Seared Scallops with Lemon Butter

Scallops feel like a restaurant order, and then you find out the technique is simple and fast. Buttery, bright with lemon, and on the table quickly enough for a weeknight. I make these when I want date night at home. Salt and Lavender explains the method.
