I know that many of us are fans of Applebee’s signature Bourbon Street chicken and shrimp dish. It’s just unforgettable and one of the most craved. You might be surprised how simple it is to make at home using this recipe from ThatGirlCanCook on YouTube!
Ingredients:
Whipped Garlic Mashed Potatoes
Chicken
Shrimp
Onions & Mushrooms
Cajun Butter
Directions:
Prepare all the needed ingredients.
Place the chicken breasts in a large mixing bowl and season with 1 tbsp olive oil, 1 tbsp Worcestershire sauce, 1 tbsp dried thyme, 1 tsp black pepper, 1 tsp smoked paprika, 1 tbsp garlic powder, 1 tbsp Cajun seasoning, and ¼ cup bourbon. Mix well to coat the chicken with seasonings all the way through.
Cover and set it aside.
For the shrimp, season them with 1 tsp olive oil, 1 tsp old bay seasoning, 1 tsp garlic powder, ½ tsp black pepper, ½ tsp dried thyme, and 1-2 tbsp of Bourbon. Combine well to season the shrimps evenly.
Pour 3 cups of chicken broth, 2 cups of water, kosher salt, 2 teaspoons minced garlic, and 1.5 pounds of red potatoes into a hot pan.Boil uncovered until the potatoes are fork tender.
Once the potatoes are ready, strain the water out of them. Make sure to reserve a cup of boiling broth. In the pan with the boiled potatoes, add 1 cup of heavy whipping cream and 1 tbsp of butter. Mash the potatoes until they are no longer whole. Add more liquid as needed.
Using a hand mixer, blend the mashed potatoes together until smooth and creamy. Season the potatoes with black pepper to taste and 1-2 tsp of salt. Blend again until well combined.
Place a pan over medium heat and melt butter to grease the pan.
Then, add in the chopped onions and mushrooms. Sauté until the onions and mushrooms are softened and browned. Season with salt and pepper to taste. Remove the onions and mushrooms from the pan and set them aside.
In the same pan, sear the seasoned chicken breasts for about 5-7 minutes per side. Combine the Cajun butter ingredients in a bowl. Brush or add some Cajun butter on top of the chicken breasts.
Remove the chickens from the heat and set them aside when they are fully cooked.
In the same pan, add the seasoned shrimp and flip each piece after about a minute of searing on each side. Don’t overcook. Remove from heat and set aside once cooked.
Add a scoop of mashed potatoes to a large platter, some Cajun butter, one of the chicken breasts, the shrimp, onions, and mushrooms to assemble the dish. Garnish with parsley if desired.
Serve and have fun!
