Scrub the russet potatoes thoroughly under running water, then cut them lengthwise down the middle. Quarter each of the halves, then cut those pieces into wedges. Repeat with the other potato. Transfer the potato wedges to a big bowl of iced water and soak them for ten minutes. After ten minutes, remove them from the iced water and transfer them to an empty bowl. Rinse the potato wedges one more time in water, then dry them off completely.
(Preheat your air fryer to 325 degrees F at this point.) Drizzle 1 tbsp olive oil on the dried potato wedges and season with 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp ground black pepper, and 1/2 tsp smoked paprika. Toss well, making sure the wedges are coated properly with the seasonings. Place the potato wedges, skin side down, on the air fryer basket, giving some space in between. Bake them for twelve minutes, give them a shake, then increase the temperature to 400 degrees F and air fry for another twelve minutes. Garnish with some freshly chopped parsley and grated parmesan. Serve and enjoy!
