This shrimp and potato cheese casserole recipe by The Hungry Jawn on YouTube has cheesy, herby mashed potatoes that are packed with shrimp and cheesy goodness. I love shrimp, but I’ve never had it in a cheesy casserole before. The color of this casserole looks amazing, and it has some of my favorite things all in one. A bite of shrimp and cheesy potatoes sounds delicious and this recipe looks well seasoned.

Ingredients:

  • parsley, finely chopped
  • chives, finely chopped
  • 1 stick butter, melted
  • 12 small potatoes or however many
  • 8 oz sour cream
  • 1/4 cup coffee mate creamer or milk
  • 2 tsp Adobo
  • shrimp
  • sharp cheddar cheese
  • white and black pepper
  • paprika
  • red chili flakes
  • chili powder
  • Old Bay seasoning

Directions:

First, melt the butter and transfer the soft boiled potatoes into a large mixing bowl. Add the butter to the potatoes and mash. Add sour cream and any seasonings you desire. Next, transfer the cheesy potato mixture into a baking pan. Flatten and smash it down for it to be an even layer surface. Add the semi-cooked shrimp into the potato mixture and mix until the shrimp is submerged. Sprinkle more cheese on top and paprika for color. Cook for 10 minutes at 375F.

Overall, the recipe didn’t say the exact temperature to bake this but you can gauge the temperature and until the cheese is melted on top. Serve this dish it a side of vegetables for a full course meal or a side salad. Shrimp is my favorite seafood, and this would be a great recipe to switch it up.
