This mudslide pie recipe with Paula Deen is a blast from the past from her video vault. This is a great recipe if you’re an ice cream lover because this pie is filled with ice cream. This is very simple to make and only requires 3 ingredients. Plus, with the additional toppings, you’re willing to add on top of the pie such as chocolate sauce, chopped nuts and whipped cream. The only thing that requires work is mixing and forming the crust into the pie crust pan. I think it’s crazy that this mudslide pie consists of heaps of ice cream stacked upon each other.
First, beat up chocolate wafers in a plastic bag until it’s finely crushed. For the crust, using a large mixing bowl, place cookie crumbs, and melted butter until they are moist. Dump the crust mixture into the pie shell pan and press firmly on the bottom and sides of the tin.
Next, equally, portion the coffee ice cream into the pie shells and mound the ice cream to create a 3-inch high dome. Evenly smooth out the ice cream with your hand or ladle and place it in the freezer for approximately 6 hours or more.
Note: to serve, drizzle chocolate sauce and sprinkle with more cookie crumbs and chopped nuts if desired.
Overall, I love coffee ice cream so this is a great recipe for me to try. I think you can use whatever flavor ice cream you like. Plus, I love chocolate cookie crumbles so this is one of the best pies that I would eat. I remember ordering one when I went to a southern diner and it was decadent.
