Stuffed peppers were one of the very first dinner recipes I learned to make when I moved into my first apartment, so they have a very special place in my heart. I will never forget the delicious smell of stuffed peppers filling my new apartment and they really made me feel at home as I was starting this new chapter in my life. I made my stuffed peppers using the traditional recipe and method that my Mom always used from the Better Homes and Gardens Cookbook and I had never even thought of making them any other way until I saw this wonderful video from The BBQ Pit Boys where they actually made the stuffed peppers outside on the grill. The recipe is very much like traditional stuffed peppers but with a few interesting twists, such as the use of sausage in the stuffing and the fact that you make patties with your ground beef chuck and sear them on the pit before you make the lovely filling for your peppers. The ground beef goes back into the mixing bowl only partially cooked but filled with that smoky grilled flavor that many of us love. The ingredients of this recipe are very basic and easily obtainable as well, which is a huge bonus.
First, you cook your sausage on the grill and make patties out of your ground chuck mixed with chopped onion (sear the patties only).
Then chop your sausage and mix your seared patty meat with the other ingredients and stuff your peppers then place them in a cast-iron skillet and cook on the grill till done.
You add some cheese on top at the end. These stuffed peppers are absolutely delicious.
