Once I found this recipe, my mornings have changed forever as I now eat these cookies every day on my way to work. Since they are super easy to make, I make a batch of them almost every week.
Every year for thanksgiving, my aunt has always made countless batches of tiny pumpkin pies to give out to all of her family and friends. When November rolls around, I always get excited upon arrival, waiting for my batch of pies. Pumpkin pie has always been my favorite, but I nave never made one myself because I always receive my aunt’s pies. However, when I found the recipe for these pumpkin pie breakfast cookies, I can now enjoy my favorite holiday dessert year round. They are super easy to make and the taste is just as good as my aunt’s pies. Every Sunday, I take a trip to the grocery store to gather my ingredients.
Begin by mixing all of the ingredients in a large bowl, stir well.
Using an ice cream/cookie scooper, make little balls of the batter on a cookie sheet places 2 inches apart from each-other. Then, by using your hands, lightly press the balls flat into the shape of a cookie.
Put in the oven set at 350°F for 13-15 minutes. Take out and enjoy.
