One of my favorite sandwiches ever is chicken salad and it has to have grapes in it! Grapes compliment the chicken in a way that is indescribable! I tasted it like that one time and I was hooked! Ever since I tasted chicken salad with grapes in it I haven’t eaten it any other way. Needless to say the time between chicken salad sandwiches was too long!
I was so excited when I found this tutorial by Robin, with Rockin Robin’s Cooking Mexican Recipes, I was all over that! I ran to the grocery store and bought the ingredients right away. I had a real hankering for some good chicken salad and believe you me, this one is awesome!
The times that I have eaten chicken salad, the way I like it, it was made with pecan pieces. She uses cashew pieces in hers, so I tried it and loved it that way. Although, I don’t use as much salt as she does in her recipe. Sometimes I put garlic in and sometimes not. I like it just as well without it.
This chicken salad doesn’t stay in my refrigerator very long. My whole family loves it and sometimes I want to hide it! I know that sounds bad, but that’s how much I love this stuff!
