Glaze
Step 1
Pat dry the pork loin with a paper towel, then cut the meat as demonstrated in the video, and cover it with plastic wrap. Lightly pound the meat with a meat tenderizer, then mix the spices, and rub them over the meat. Fold the meat in half, then season the exterior with salt, and place it in the refrigerator to marinate.
Step 2
Place a pan on a stove over medium-high heat, then heat the oil, and melt the butter. Add the onions and saute them until soft, then add the sugar and sauce, and store them well. Let them simmer over low heat until caramelized, then transfer the onions to a small bowl, and set them aside. Add more oil to the pan, then cook the mushrooms until soft, season it with salt and pepper to taste, and continue frying for a few more seconds before removing from heat.
Step 3
Open the meat, then lay it flatly, and spread the caramelized onion evenly on top making sure to leave some space around the edges. Sprinkle the grated cheese, then add the fried mushrooms on top followed by the chopped herbs, and then slowly roll it tightly into a log. Line a baking dish with a large piece of foil followed by a crumbled parchment paper, then place the roll at the center, and securely wrap it with the parchment paper and foil as shown in the video.
Step 4
Place it in an oven preheated at 200°C or 392°F, then let it bake for about 60 minutes, and while waiting prepare the glaze. In a small bowl, mix together the olive oil, soy sauce, Dijon mustard, and chili sauce until uniform, then once the roll is done baking, unwrap it, and brush the glaze on top. Put it back in the oven, then let it bake for an additional 10 to 15 minutes, and allow it to rest for at least 10 minutes before slicing. Serve and enjoy!
