  • 1 onion, diced
  • 4 cloves of garlic, finely minced
  • 1 cup of spinach, chopped
  • 1 (14 oz) can of diced tomatoes
  • 2 cups of pumpkin puree
  • 4 cups of vegetable broth
  • 1 apple, peeled and diced
  • 1 tsp of paprika
  • ½ tsp of dried oregano
  • 1 tsp of salt
  • ¼ tsp of freshly ground black pepper
  • ¼ tsp of red pepper flakes, optional

Step 1

Place a large pot on a stove over medium-low heat, then add the olive oil, and heat it before adding the diced onions.

Step 2

Saute them for a few minutes until softened and translucent, then add the garlic, and continue to saute for another minute until fragrant.

Step 3

Add the chopped spinach, then give them a good mix to combine with the onion and garlic, and cook for an additional minute until wilted.

Step 4

Add the canned tomatoes, pumpkin puree, diced apples, and all of the spices, then mix everything until fully combined, and adjust the seasonings to taste if needed.

Step 5

Lower the heat to a gentle simmer, then pour in the vegetable broth, and let the stew cook for about 30 minutes. Ladle into serving bowls, then serve, and enjoy!
