For the chicken:
Note: if you don’t have a grinder, use ground chicken
For the breading:
Chicken fry sauce:
Slice the chicken breast into long strips and place into a bowl with chopped chicken skin. Season the chicken with garlic powder, MSG, kosher salt, ground white pepper, and granulated sugar. Mix until well combined, then grind the chicken. If you don’t have a grinder, use ground chicken.
Damp your hands, then form the ground chicken into a french fry. Rinse your hands then repeat. Place on a baking sheet lined with parchment paper. Freeze for 15 minutes.
You need 3 bowls for the breading station. In the first bowl, combine all-purpose flour, garlic powder, MSG, paprika, and kosher salt. Get the second bowl and beat the eggs with water. In the last bowl, add the panko breadcrumbs.
Coat the chicken fries in the breading mixture, dip into the eggs, then toss in the panko breadcrumbs.
Fill a heavy bottom pot with a generous amount of frying oil and heat to 350F. Once hot, fry the chicken in batches for 3 to 4 minutes.
For the sauce, add all the ingredients except the yellow mustard and mayo in a medium saucepan. Whisk to combine. Set over medium heat, then let it simmer for 8 minutes while stirring occasionally. Once done, transfer to a small bowl, and combine with yellow mustard and mayo. Whisk to combine.
